I have an A7IV. The only two lenses I currently have are f2.8. I'm thinking about adding the 200-600.

If I have a custom dial position, like number 1 on the dial, set to an Aperture of 2.8, what happens when I install a lens like the 200-600 that has a minimum aperture that is higher than that? Does it default to the lowest possible aperture?

I'd obviously test it out myself, but I don't have a lens to do that with currently. Thanks for any help or answers.

For the 200-600 it will have the widest aperture that is available at the focal length.

Solution
If your lens has an aperture ring, its setting will override whatever was previously set for previously-fitted lens using a camera dial.

Say you have two lenses, and neither has an aperture dial. You remove an f1.8 lens that you were using at f1.8, and fit an f2, f2.8, f4 or f/whatever, lens. Obviously f1.8 is now not available: the camera will adjust to the nearest (widest) available on the lens you now fit.

Thanks for the answers. Genuinely appreciated. I figured that is what would happen. As luck would have it, I just ordered a Sony 200-600 yesterday. Looking forward to trying it out on some birds.

complete the scenario, If the lens you were removing was at, say, f/11, the camera will keep that setting for the next lens.
