Although rum is versatile, it is this kind of experimentation that gives rum a bad name. Unfortunately, people think rum itself is sweet. As soon as I am done with Dry January, I am going to start posting some less sweet cocktails, or just some samples on the rocks.

Almost my last night before the ferry home. The scallops were still pulsating in their shells before sautéing in butter. The mussels were sublime and despite common wisdom, a lightly chilled Brouilly takes some beating.

I did say I wouldn't waste my time shucking scallops again, but one taste changed me back again.

I know the thread has 2023 in the title, but I see it has gone on late into 2024, so here is one for 2025. While I love Bourbon, Rye, Rum and Gin, having a vineyard means we have wine... a lot of wine. Here is a shot of inside our wine cellar. I did a count today and there are 900 bottles packaged and another 400 sitting in those barrels. It's mostly Pinot Noir with some Riesling, Pinot Gris and Rose. We can't sell it as we don't have a license, so we drink what we can and give the rest to friends. If anyone is ever in the Willamette Valley of Oregon and needs wine, I can hook you up.

I am drinking coffee at the moment as it has just gone midday here but last night I had a few glasses of port from my barrel. It's about 5 litres I think. It's great - you put cheap port in and you get good port out. I'll have to take a pic & put it up here.

How long do you let the port sit in there before drinking?

It's certainly similar to that one. I know it is American oak and after looking at it last night, I reckon it is 3 litres. It is getting on for 25 years old now. As far as how long I leave the port in it - it's very scientific - I just keep topping it up to be honest. I try never to let it get lower than about 1/3 full and pretty much never fill it much above 2/3. When it was new and I first filled it I left it between 6 and 9 months I think. It's almost ready for a top up now...

No special lighting at all - just the ambient late afternoon daylight thru an adjacent window. The original pic also included the bottle, but the reflection off the bottle was distracting - so it got cropped.

I have 4 of the regular tumblers and had 2 of the doubles - but sadly broke one of the big ones when I was washing it a few years back. I've always meant to replace it, but they were virtually impossible to find when I last looked - and they have gotten really expensive.

New rule at my house - always wash expensive crystal over a soft towel or sponge in the sink!
